Recipes My Girlfriends Recommended

I'm really lucky to have a close, core group of girlfriends from high school. Some of us even go as far back as middle school. We are all in different phases of life (some single, some just starting our families, some sending kids off to college!) We talk almost daily via the Marco Polo app, we also have a group text stream, and we have a group Instagram chat. We share LOTS of tips back and forth. I know this kind of long-lasting friend group is rare and I don't take it for granted, so I'd like to share some of that wealth with you. Here are the recipes they've recommended to me over the years.

PS - They also have fantastic product recommendations, which you can find here.

Mains:

Cajun Chicken Pasta

“For those trying to eat healthy - we had this pasta last night. The sauce is a “healthy” Alfredo style sauce. It’s only 324 calories for 1.5 cups of the pasta. It’s healthy but also cozy on a cold night.” - BP

Roasted Autumn Vegetables and Chicken Sausage

“BP and I are on the same page, I'm making a very similar recipe” - AT (HBL NOTE: This recipe is similar to the one below.)

Sheet-Pan Maple-Dijon Sausage and Fall Veggies

“I loosely follow this and just use whatever veggies we have in the fridge (usually carrots, broccoli, Brussels, etc)” - BP

Hot And Sour Soup

“Also, when I *occasionally* cook, I often make this tofu recipe. It’s so easy and soooo good.“ - JB

Silken Tofu with Spicy Soy Dressing

“Not sure if everyone has NY Times, but give tofu a chance!!!” - JB

Barbecue Chicken Quinoa Casserole

“It is NOT a recipe for one person.” - LB

No recipe, just…

“Air fry anything.” - AS

Fancy Dinners:

HBL NOTE: This came about when one friend asked the group for recipes that would feel special for Christmas.

Garlic Rosemary Beef Tenderloin

“ Love all of her recipes - they’re always easy and always delicious. “ - BP

One Pot Creamy Baked Risotto with Lemon Pepper Chicken

“This is one of our absolute FAVORITE recipes that feels fancier but is SO easy! Risotto is usually high-maintenance and a lot of work, but this one is NOT! I season the chicken with thyme and rosemary instead of the lemon-pepper listed” - BG

Crown Roast of Pork with Fennel and Lemon

My dad made this one year and it felt very fancy! - AH

Beef Wellington

My dad actually made this for Christmas dinner this year and it was delicious. - AH

Sides:

The Ultimate Cheesy Hasselback Scalloped Potatoes

“One of my favorite sides” - SW

Prosciutto Asparagus Puff Pastry Bundles

“One of my favorite sides” - SW

Breakfasts:

Blueberry Baked Oatmeal

“Oatmeal recipe. Only 1/3 cup of maple syrup in this but I froze it for when my family visited so if you're overloaded on oat snacks but want to use the syrup, you can freeze for later!” - AT

HBL Note: This recipe was recommended when one of my friends received a Costco-sized jug of maple syrup from her husband and didn’t know what to do with it.
